Bacon & Egg Mushroom Cups

  • Oil Spray
  • 4 large cup shaped portobello mushrooms
  • Crushed garlic
  • 2 slices bacon, trimmed of fat, cut into pieces
  • 4 eggs
  • Grated cheddar cheese
  • Salt and pepper
  • Fresh herbs to season
Step 1

Preheat oven to 200°C and lightly spray a muffin tin. Remove stalk of mushroom and place mushrooms in the muffin tin.

Step 2

In each mushroom cup place the garlic and bacon. Carefully crack an egg into each mushroom cup, sprinkle with cheese and season with salt and pepper.

Step 3

Cook in oven for 20–30 minutes (depending on how you like your eggs). Serve with fresh herbs of your choice.
