- Spray your muffin pan with non-stick cooking spray.
- Peel and grate enough sweet potato to place a small amount in the base of each muffin pan.
- Top with a small amount of mozzarella.
- Combine your eggs, tasteless protein, salt and pepper in a mixing jug with a spout suitable for pouring.
- Add crumbled feta and chopped parsley to the egg mixture and lightly mix.
- Pour the mixture into the muffin pans on top of the sweet potato and cheese.
- Place in a pre-heated 180°C oven for 25–30 minutes.
- Enjoy!
